Green Beans with Tomatoes
Ingredients:
| 1½ | pounds green beans |
| 1 | pound tomatoes, chopped |
| ⅓ | cup olive oil |
| 1 | yellow onion, sliced thin |
| 2 | garlic cloves, minced |
| ¼ | cup Italian parsely, chopped |
| 4½ | tablespoons red wine vinegar |
| 1½ | teaspoons dried oregano |
| ½ | teaspoon salt |
| ½ | teaspoon black pepper |
Heat olive oil in a heavy skillet. Stir-fry beans until bright green. Reduce heat, add onion and garlic, and cook for 1 minute. Add remaining ingredients. Continue cooking until sauce is slightly reduced.
