Hot Honey-Glazed Carrots
Ingredients:
| 2 | pounds carrots |
| 6 | tablespoons hot honey |
| ¼ | cup vegetable oil |
| 1 | tablespoon smoked paprika |
| 1 | teaspoon kosher salt |
| 1 | teaspoon pepper |
| 2 | green onions |
| ¼ | bunch cilantro |
| ¼ | cup slivered almonds, toasted |
Preheat oven to 425° F. Line a baking sheet with foil. Wash, and if desired, peel carrots. In a small bowl, mix together the hot honey, oil, paprika, salt, and pepper.
Arrange carrots in single layer on the baking sheet and coat with half the honey mixture. Bake 20 to 25 minutes, stirring halfway through cook time, until carrots are glazed and desired tenderness. Brush carrots with remaining half of the honey mixture.
Slice green onions thinly and chop cilantro (¼‑cup each). Crush or chop half the slivered almonds. In a small bowl, stir together green onion, cilantro, and almonds. Arrange carrots in serving dish and sprinkle with topping. Serve.
